Food Journal Day 11

Three tests then more Christmas shopping. Forgive me for being brief, but I am incredibly tired.

Breakfast: Mango smoothie. Simply mango and water.

Lunch: Big salad with baby lettuce, cucumber, these tiny little yellow tomatoes, raw pepitas, chopped raw pecans, 3 chopped dates, 1/2 of an avocado, fresh squeezed lemon juice for dressing.

Dinner: A meal my mother made for me of carrots, string beans and vegan zucchini pancakes. Enjoyed a glass of Soylicious Coconut Egg Nog for dessert.

    • Here are the ingredients. My Mom eyeballs, so the measurements aren’t specific, sorry. Hope it is helpful!

      Zucchini Pancakes:
      – 2 grated zucchini
      – 1/2 minced onion
      – A few tablespoons of gluten-free flour
      – Tiny bit of baking power (1/4 teaspoon maybe)
      – Any egg substitute for 2 eggs (we normally use ground flax seed and water – it thickens and becomes sticky)
      – Salt

      You can add any spices you like. Dill is a good one. Simply mix all that in a bowl and then cook like pancakes, browning on each side with some canola or coconut oil to oil the pan. If you’re a non-vegan, serve it up with a mixture of fresh dill and Greek yogurt. I missed out on that tonight, but it smelled amazing.
